Choc and Orange Mousse

Method

1.Place cocoa, egg yolks, cornflour sweetener and milk in a pan.

2.Grate rind of orange and add half to the chocolate mixture with the juice of the orange.

3.Heat gently, stirring until it thickens and coats the back of a spoon.

4.Cover with damp greaseproof paper to prevent a skin forming until cool.

5.Sprinkle gelatine over 2 tablespoons water in a small basin and leave to soak for 5 minutes.

6.Stand it in a pan of hot water until dissolved, then stir into the chocolate mixture.

7.Whisk egg whites until stiff and fold into chocolate mixture.

8.Divide between four serving glasses and leave to set in refrigerator.

9.Serve decorated with yogurt and remaining orange rind.
